The Easiest Weeknight Dinner

Getting home from work, dealing with homework and then dealing with making dinner is kinda the worst. 

I’ve already had a very (VERY) full day and you want me to do WHAT?!!

I decided not too long ago that I would simplify dinner-making as much as I could, whenever I could. Life is complicated enough. Our schedule is complicated enough. Dinner shouldn’t be.

One of the handy-dandy perks of Costco if finding things like Aidell’s sausages and meatballs at a great price that go quite nicely in the freezer, ready to use at a later date. They are REALLY good and fairly healthy. And damn, if they aren’t super easy to throw on the stove at the last minute. (Especially the meatballs. They don’t really have to thaw before heating them up.) Add some veggies and some rice and you have a super fast dinner that doesn’t crush your soul just thinking about it.

When our friends at Soda Pop sent over some treats from Planet Rice, we were super excited to try them out. And we knew JUST the dinner idea to make that happen.


One of the first things I noticed about Planet Rice is there packaging. I was completely won over by their clever instructions:


I WILL walk the dog while my rice cooks thankyouverymuch.

The second thing? Yeah…I’m a sucker for the fact that Planet Rice is local. They grow their rice here in the Sacramento Area. I’ve driven by the rice fields a million times and I still continue to be fascinated by the process. I can’t help but love the fact that I probably drove past my dinner on the way to work. IN THEORY. (Humor me, please.)

The third thing I noticed? Finally something about the actual food, I know. Planet Rice is making rice a healthier option thanks to their sprouted rice. Sprouted rice actually increases the availability of nutrients and improves digestibility. See? Healthier! It’s a thing!


As someone who REEAAALLLYY doesn’t like the texture of brown rice, I have to tell you that the sprouted brown and red quinoa blend was fabulous. My husband and I were huge fans. One kid found she didn’t LOVE it, but she still ate it without too much complaint. (She loved the sprouted “blonde” rice better. I’m not mad about it.)


I love having new, healthier options to turn to even as we stick with our favorite (easy) meals. It’s delicious. It’s healthy. I don’t have to spend hours and hours in the kitchen. Plus? My family really liked everything we tried. *I* really liked everything. And it makes figuring out dinner even easier.

Which, as we all know, is my absolutely favorite part.


Easy Rice, Veggies and Meatballs

  1. Planet Rice Sprouted Rice
  2. Chicken Bouillon
  3. Aidell's sausages or meatballs
  4. Whatever veggies you have on hand
  1. Start cooking the rice according to package directions. I always add in a bullion cube for flavor.
  2. While rice is cooking, chop veggies. Steam our sauté with a little olive oil, salt & pepper.
  3. 10 - 15 minutes before the rice is done, warm/brown meatballs or sausages.
  4. Serve veggies and meatballs over rice. THAT IS ALL.

    I would add pepitas to the top of that for crunch. But mostly it’s because I would add pepitas to anything. ANYTHING! That looks SUPER good Jill! I’m gonna have to try some of that Planet Rice action.
